Spelunking: Sugar, Sugar

Overheard at BAT:

“What is invert sugar?” Katy Wilson asked aloud while looking at the ingredients on her Sour Patch Kids.

“Oh, you know, it’s unsociable sugar,” Joe Kier replied.


According to Wikipedia, it is actually a mixture of glucose and fructose, obtained by splitting sucrose. It ends up being sweeter than sucrose. By the way,  inverted sugar is made when making jams and it is the sugar in honey.
